Not too good to be true!
My cousin sent me home with a sample packet of this stuff (I was having problems losing weight and my battle with sugar was severely hindering my goals). tastes good in my tea, no icky breath after drinking, sinuses clearing up
So far i am in love! DEEEEEElicious! My new favorite sweetener
I've tried several brands of Xylitol and only disliked one ("Ideal") because it contained other ingredients. This brand does not. The granules are sugar sized and it tastes like sugar and can be used like sugar. I even put it in my coffee bean grinder to see if I could turn it into powdered sugar and it worked (very quickly) and was delicious. The down side is that it became very hard a couple days later, but that may happen with regular sugar too...I know that powdered sugar is sugar plus an ingredient to keep it "powdery" so this shouldn't be held against Xylitol. Several things worth knowing about Xylitol: 1. It is very hard to tell the difference between Xylitol and sugar, both by the way it looks and the way it tastes. The only real difference is that it has a cooling effect on your tongue, rather like mint. It tastes like sugar on your tongue but I've found when cooking/baking with it, it takes a little bit extra (maybe 10%) to achieve the same...

I personally love Xylitol - I have no digestive ill effects from it at all, though I do from many other sugar alcohols. I think a lot of that depends on your own personal body chemistry, so if you need a sugar replacement you should try a lot of small amounts of the different sugar alcohols. For me, maltitol and sorbitol are awful, but xylitol is just fine. Of all the sugar replacements I have tried, I think xylitol tastes the most like sugar. It has a nice, grainy texture like sugar does, which makes it appealing for applications like sprinkling it on fruit, and it isn't overly-sweet the way I find most sugar replacements are. If anything, I would say measure for measure it is slightly less sweet than sugar, which I actually like as I'm trying to reduce my sweet tooth in general.HOWEVER, EVERYONE WHO OWNS A DOG NEEDS TO BE AWARE THAT XYLITOL IS DEADLY TO DOGS. The best!
I've been using Xylitol, specifically Emerald Forest's product, for a few years now. It looks and tastes like sugar and can be used for baking too. There have been a few occasions when it didn't quite substitute right, but those are few and far between. Coffee, tea, hot chocolate, macaroons, chocolate chip cookies, brownies...all turn out great. I'm on a no sugar diet (along with no grains) to combat a possible candida problem. Xylitol has been my savior. I still get my little sweet kick now and then without any of the damaging health effects of sugar. And, xylitol is also anti-fungal, so it even helps with things like candida. High recommended! And this price is a total steal too! One 32 ounce can costs nearly $30 at my local health food store. This price can't be beat!

xylitol tastes great
I bought enough of these so I got free shipping, which made the price even more excellent compared to the grocery store where the same brand was selling in one pound sacks for $6-7 / lb. So this is a great deal. It looks and tastes just like sugar (I am not exaggerating!) though it is not actually sugar but a sugar alcohol. It is perhaps slightly sweeter, tends to lump up a little more, but the lumps break up easily with stirring. Though it is not lower calorie, it is low glycemic index which means that it is converted to sugars more slowly and therefore does not cause insulin levels to spike (a factor in fatty weight gain), and actually protects against tooth decay! Your recipies convert spoon per spoon of sugar or cup per cup so it's easy to use. It cooks up like sugar too. We really love this product. Buy enough to get free shipping and really save!

Great Sweetener but learn about the product
I wanted to share that my own experience with finding xylitol was nothing short of a miracle. I can enjoy food in moderation that I was denying myself. I say moderation, because xylitol can cause soft or even liquid stool if you overdo it. It's not safe for pets because they get severe hypoglycemia quickly which can kill them, especially puppies and kittens. What I do is mix this with stevia drops and I can then use that concentration for coffee and tea all day without ill effects. I feel I need to address some reviews that people have on xylitol, not necessarily from Now foods specifically. I am concerned about people buying a new product without checking what it is and then giving it bad reviews for effects written clearly on the bag. It would be different if the manufacturer was being deceptive but honestly, don't feed your kids something if you don't know what it is and then want it taken off the market. Great product, great company. High quality xylitol made from corn, not birch. However, this stuff is very toxic to dogs. Don't let them have any of it, not even small quantities. If you want a sweetener like this but without such toxicity to dogs, get Erythritol. Same sort of thing -- a sugar alcohol, but not dangerous for animals. Also, it does not have the same digestive effects (gas, bloating, diarrhea) that Xylitol does. It is maybe a little less sweet than Xylitol, however. This does not mean it is bad for people - for example, chocolate is fine for people but also toxic to dogs. Note: When I do buy it, I use this company. I've ordered Xylitol and Erythritol from them and they were VERY high quality. When I tried it from EmeraldForest, I found some products had a horrible, strange smell and faint aftertaste. As described by other reviewers, I just wanted to add in response to an above revie, I have successfully used this with a yeast recipe. All you have to do is proof the yeast in the beginning with a teaspoon of real sugar to make it foam and then you can use xylitol as the sweetener in the recipe. This will add about 4 grams of total sugar to the recipe.

Very good replacement for sucrose, but be warned...
I began using Xylitol as a replacement for sugar about two months ago. Since then I have not consciously used table sugar in anything I have eaten or drank. As it was I was only using it for coffee in the morning, and tea in the evenings. Now I don't use table sugar at all. Xylitol is as sweet as sugar, and has a vastly different impact on your blood chemistry. I'll spare you the biochemical details, and suffice to say that if you are on a low-carb lifestyle, Xylitol fits right in. That having been said, make sure you are willing to make a commitment to this product. Xylitol is not digested, but rather is consumed in part by the bacteria in your stomach. There is an adjustment period while you build up the suitable level of bacteria (good bacteria, mind you) in your intestines to consume this stuff. Xylitol - stop caries sweetly
My otherwise healthy daughter started getting caries at about 18 months. Giving her xylitol-based cheming-gum after every meal or snack seems to have stopped them (no noticeable developments 15 months later; we also paid more attention to brushing and dental visits). Next step was to find a replacement sugar and chose Xlear's Xylo-Sweet. Great, but not for baking
I'm trying to reduce my sugar intake and bought XyloSweet to use in smoothies, shakes and cereal. It worked fabulously: no strange taste, dissolved like real sugar, no unpleasant gastrointestinal issues. Sweet but not cloying or overpowering. Since xylosweet is granulated, I decided to try it in baking. This was a total failure. I used a brownie recipe that is typically very forgiving (In the past, I've replaced the sugar with honey, used 2/3 the sugar and substituted whole wheat flour with minimal differences in taste or texture). This time, I substituted only 25% of the sugar with xylosweet (1/4 cup xylosweet and 3/4 cup white sugar). The batter tasted fine. In the oven, the top of the brownies was extremely shiny. The finished brownies were dry, cakey (instead of fudgey) and lacked the slightly crackly crust they usually had. They tasted plasticky and smelled a bit like playdough.
