Top quality sourdough starter
The wet dough sourdough product is excellent. Upon feeding and expanding it woke up very quickly and leavened loafs extremely well. Lots of classic sourdough taste and lots of gas production. But as a university microbiologist, I can't just try out a sourdough starter. I had to take it to the lab and find out what's in it. I am happy to report that the starter contains precisely what it should: one species of yeast and one species of lactic acid bacteria. It is a complex task to definitively identify them as the authentic Saccharomyces exiguus and Lactobacillus sanfranciscensis, but everything is consistent so far with them being derived from authentic San Francisco sourdough. In particular, as one subcultures them repeatedly, the levels of each stay pretty consistent. This is a hallmark of an authentic sourdough starter pair of microbes. I highly recommend this product.

Fantastic Product and Customer Service
This product delivers. Literally. The San Francisco Sourdough Yeast arrived quickly; the starter is of excellent quality, and the rapid customer service (Rosalyn answered my online questions on a Sunday!) was about the best I have ever experienced. Good things do come in small packages and this sourdough starter is no exception.As I write this my dough is proofing and that singular San Francisco aroma tells me this is the real thing. M-m-m. I close my eyes and remember that delicious, yeasty sourdough from Fisherman's Wharf.The only caveat comes with following the directions. After the first feeding of the yeast with bread flour and water, the directions state to discard all but ¼ cup, which can be used to make pancakes or biscuits. (The pancakes were delicious.) The second and third feedings each require adding ½ cup water and slightly less than 1 cup (I used 7/8 cup) bread flour.The Sourdough Bread recipe calls for 2 1/3 cups of starter...

This starter is an amazing and well-balanced culture. You can smell the potential in it when it first arrives. It's supposed to revive by the second day of feeding it, but I found that it almost immediately picked up with bubble action after the initial feeding. I am going to give this creature a name and invite it into the family. I'm going to walk it everyday and groom its shiny coat. I love it! I'm moderately experienced with sourdough starters and the only starter I've ever used that rivals this starter is one that I was given as part of a baking class years ago from a baker in Boulder, CO -- and that starter had a San Francisco lineage. Creamy bread without commercial yeast, but read on for "sour"
If you follow the supplied directions, you'll get an active sourdough starter within days; however, keep in mind that not all sourdough is sour, so you'll have to take some extra steps to get the San Francisco tang. I bought this culture to add to my existing sourdough starter (which IS sour) to make the flavor more complex but ended up instead keeping two separate starters, simply because this one is so good. Newcomers to sourdough may be disappointed with the taste until they learn the proper techniques to achieve the type of bread flavor they want.To begin, "sourdough" refers not to the taste, but to the method, which uses wild yeast and bacteria to create a sponge to be used in place of commercial yeast. This culture will do exactly that. In three days, I had such an active starter that my bread rose quickly, even in a winter-temperature house. The bread was creamy, with an excellent crumb, although, because the starter was brand new, it tasted like white bread...

WOW, Better Sour Dough Bread Than We Can Buy
This company really sends out a great sour dough starter and instructions. I recommend you also buy the Sour Dough Starter Kit that comes with the wide mouth jar and recipe book. We followed their instruction exactly and the bread turned out better than any Sour Dough that we can purchase from a store, really nice and chewy, and is incredible when toasted. They show you how to make it extra sour by "feeding" it with more flour and water over time. We used pure filtered water and King Arthur Unbleached Bread Flour in our recipe, my wife and I really got excited about how great it tasted. We let it rise 2 times, and did an extra rise overnight. The dough was so bouncy that I am going to try and make pizza dough next. I tried other sour dough companies on Amazon, but this one is the best. Real Sour Dough!
As promised, a very flavorful authentic bay area sourdough starter. As with all sourdoughs, it is pretty slow rising and requires some fore planning if you want it for a specific meal, but well worth the effort. We activated the culture then split it and froze a part of it, eventually we suspect that the local yeast and bacteria will contaminate this non native (to our area) culture and it will become diluted, so we'll be able to restart it and restore the flavor.

Excellent for sourdough starter
Lovely jar. I use it for my sourdough starter because it's the perfect size. Due to its squared-off shape, it fits better in a corner of the refrigerator than a typical round one. The only thing which could be better is if it were shorter and wider, but held the same amount. It would be smart of you to buy the Danish stirrer pictured with the jar (get a small) to make stirring the starter up more easily when you feed it.Some have mentioned that it comes apart. It's supposed to, so that the jar can be easily filled and cleaned when used for canning. The metal fits cleanly back in so that's no problem. In fact, I recommend that you take it apart for each cleaning.This was a great purchase, and since I don't pay postage, it was cheaper than anywhere else I found it on line.

A very elegant canning jar
Bought this particular jar to store our ground coffee in. It is a really beautiful shape - taller and leaner than most canning jars that hold this volume of stuff. My only minor quibble (and hence 4 stars not 5) is that the jar opening is narrow enough that a male adult probably could not get his hand down into it - ie to grab the coffee scoop at the bottom of the jar if the coffee is almost gone. Other than that, highly recommended and very very pretty.

Great Tasting Starter
I received the dry starter in the mail and immediately fed it. Within a day I had a bubbling mixture. Baked with it a few days later and was impressed by the taste but it was not very strong. So I kept feeding it for a couple weeks and now it has blossomed into a wonderfully strong culture. The aroma makes me smile every time I feed it. I live in South Florida and there must be really great little critters floating around to help it grow. Thanks for the great starter but now I think my 'pet' has graduated into the big league.

sour dough heaven
I was raised on sour dough hot cakes. This starter is a little different than what i remember but then that was 65 years ago. Unquestionably the best IF you grow it correctly!
Let's face it - unless you're buying an artisan bread from a bakery, most supermarket-variety sourdough breads are simply not sour enough for most tastes. But by using this starter, that problem is solved! Let me offer my tips and tricks for the best starter ever:1) Get a good crock to mix and store your starter, and follow the directions on getting started. Grow it slowly, don't even think about using for at least a month. It takes time, and I don't care who you are, you're not going to get good sourdough after a week or ten days.2) I keep my crock on top of the fridge, not in it. Ever. The starter needs warmth to grow and develop its signature flavor, and chilling it stops growth and can harm the starter.3) Once it's going, feed it once a week with equal parts flour and warm water. This is important! If your crock's starting to get too full, and you're not planning to use any starter right away, take half of it out and toss it. Just keep...

I've tried several different starters, some never came alive, and several tasted wrong.
