Helps acheive a smooth finish to butter cream icing
I regularly use this in my butter cream icing, and it helps the icing set-up so it's not sticky. If you accidentally bump into your decorated cake, the damage is less noticeable if the icing was made with meringue powder, and many times can be repaired with a tooth pick. Because it takes the stickiness out of the icing, you can achieve a nice smooth top and sides with ease. Before adding the decorative elements, give the plain iced cake a while to dry then you can place a piece of waxed paper under your hand and slide it over the cake to smooth out the icing. Works well on the sides of the cake, too. It gives you a very professional look, removing the lines from the spatula, and I always receive praise on how smooth my icing is. The price on Amazon is also quite a bit lower than my local craft store.

This is a great product. I've found that it keeps pretty well under normal conditions, which is nice since I don't bake as often as I would like. It makes preparing classic royal icing a breeze and has a nice neutral flavor.

Good Product
This is a good product it does what it is supposed to do. It is a substitute for egg whites and it works really well. Its a nice size and since a little goes a long way this 8 oz can will last me a while. Its great for use in baking! I would definitely recommend this product to a friend.

A MUST!
Making royal icing is now quick and painless. I HIGHLY recommend to anyone who makes cakes, etc. on a regular basis. Just make sure you have a powerful enough mixer for the job. It is thick and must be beaten for 10+ minutes to make icing. Use one that is 300 Watts or more.

Perfect for making buttercream resemble fondant without that fondant taste
Wouldn't decorate a cake without it, but I use very little in my frosting... not enough to compromise the taste. I can see how someone would give it very few stars if they used more than a few tsps... I just want enough to firm the frosting a bit and add to the batter to level your cakes out as much as possible.

Americolor beats Wilton for my royal icing
I use royal icing to decorate cookies and I use Americolor Meringue powder to make it. It's very stable and I'm able to have a better consistency icing than with Wilton meringue powder. I highly recommend it for consistent results in your royal icing projects. :)

Can't Believe It Took Me So Long To Discover!

Where Can I buy Meringue Powder


I came upon a post Callye did and she said that CK meringue powder is actually Henry and Henry meringue powder packaged in smaller amounts. After our conversation about meringue powder, I went on the search for Henry and Henry meringue powder. I don't think I've had blotching and I don't use either Wilton or Henry and Henry but I also don't have the humidity issues to deal with that you do. I wonder if the lemon juice has anything to do with the blotching or even the amount of meringue...  So, if changing the meringue powder branddoesn't work for you and you're still having problems with blotching, I'd suggest putting a thin layer of icing on the cookie to act as a barrier before you flood. After your experiments, I have to believe that the majority of your issue with blotching was your Wilton meringue powder. I tried your recipe since it uses twice as much meringue powder as mine, thinking maybe that was the only factor that was different.
