It is an important ingredient with lemon grass, chile peppers, shallots, and garlic for Thai curry pastes and soups. Use it sliced and minced to add flavor to stir-frys. Prepare first by scraping off any large protrusions or uneven pieces. Be careful not to use too much galangal, as it can overpower the taste of a dish. This spice is popular in Asiatic cooking and was well known in European medieval cooking. The plant Alpinia galanga (or Languas galangal) has numerous common names, including greater galangal, galangale and galang. It is also known as Siamese ginger or Laos, since the plant is indigenous to Southeast Asia, and its rhizome (root) resembles ginger in appearance and in taste. The word galangal is probably derived from the Arabic translation of its Chinese name, liang-tiang, which means "mild ginger". Like ginger, it's said to have healing properties and is used in homoeopathic remedie. HOW TO STORE: Galangal can be stored in the vegetable drawer of a refrigerator for two to three weeks. First wrap the galangal in plastic wrap or, preferably, wrap the root first in a damp cloth, then in a plastic bag. Galangal can be frozen without losing any flavor. Exellent product
I love my Galangal powder from Whole Spice, use it in many recipes instead of black pepper since I cannot have black pepper. I like the economic bulk package from Whole Spice. I keep a glass jar of the powder handy for cooking and refill it from the bag, as needed. I do keep the open bag and the jar in the fridge but you may not have to do that.

Galangal, not to be confused with ginger is also known as blue ginger, Siamese ginger and Thai ginger. Store fresh galangal in a cool, dark place for up to 2 weeks. If you cannot find galangal substitute half the quantity in your recipe with grated fresh ginger. Galangals’ flavour is similar to ginger’s but is not as strong. Galangal requires warm temperate to subtropical conditions and grows best in rich, moist, well drained soils.

Galangal (Alpinia galanga), also called greater galangal, Thai galangal or Siamese ginger, is one of the most essential spices in the cuisines of Thailand, Malaysia and Indonesia. Galangal depends to the ginger family (Zingiberaceae), but the taste of the healthy rhizome is quite different to ginger.

2 small tomatoes 4-5 shallots 2-3 lemon grass stalks (white part only) 3-4 spoons sliced galangal 1 cup fresh mushrooms (oyster, straw and others will do) 4-5 drops kaffir lime oil 5% 2-6 fresh small chilies 200 gr chicken (any part will do) 3... If you can’t get fresh galangal, you might have no choice but to use dried galangal or substitute it with fresh ginger. Add the galangal, lemon grass and chilies, the salt, the fish sauce and the sugar. Boil the coconut milk, then add the chicken and let it simmer for about 5 minutes. Add the mushrooms, shallots and tomatoes and bring to a boil.
